Calamari Fra Diavolo

Everyone loves a good pizza, and the place we headed for Neighborhood Eats this week claims they've got the best. That's along with some other items on the menu at 'Star Tavern,' located at 400 High Street in Orange, New Jersey.

It's easy to eat a whole pizza pie at 'Star Tavern.' The dough is rolled super thin, it's shaped with this little device and topped with homemade red sauce and whatever toppings you like.

The recipe for the pizza is the same as it's been since 1965. Gary Vayianos' family bought the restaurant in 1980 and they added some other dishes -- wings, pastas, sausage sandwich and calamari.

RECIPE FOR CALAMARI FRA DIAVOLO:
Ingredients:

  • 1 pound of small squid, cleaned and bodies cut into narrow rings ... tentacles left whole
  • 2 tablespoons of olive oil
  • 1 teaspoon of finely chopped fresh garlic
  • 3-4 teaspoons of diced green yellow and red peppers
  • 1/4 teaspoon each of: parsley, black pepper,oregano and hot seeds
  • 1 tablespoon of white wine

    Preparation:
    In a medium saucepan add: olive oil, peppers and garlic over medium high heat.

    When the garlic is a golden brown add the calamari.

    Immediately thereafter, add your white wine keeping the temperature medium high.

    Next, add a cup of marinara sauce. Top it off with parsley, oregano, hot seeds, salt and black pepper and saute for 4 to 6 minutes.

    Now ready to serve.
