Chef Eton Chan shared the recipe for his made-to-order dumplings stuffed to the brim with meat and veggies.
Chicken Dumplings:
Ingredients:
3 pounds of ground chicken meat
1/4 pound of sliced fresh shiitake mushrooms
1 teaspoon of cornstarch
1/2 cup of soy sauce
1 teaspoon of sesame oil
1 teaspoon of salt
1/2 teaspoon of freshly ground white pepper
1 tablespoon of cold water
1 pack of dumpling wrappers
1 teaspoon of cooking oil
1/2 cup of water
Black Vinegar for condiment
Method:
1) To make the filling, mix all the ingredients together in a bowl
until well blended. Put back into refrigerator for 30 minutes and let
chill.
2) Take 1 tablespoon of filling and smear into the center of the
wrapper.
3) Fold over the wrapper and seal with a dab of water, and then crimp.
4) Keep a moist towel on dumplings so that they do not dry out while
you are wrapping the rest.
To Cook:
1) Heat pan to med high heat with a teaspoon of cooking oil.
2) Place dumplings into pan and sear for 10 seconds.
3) Carefully, pour 1/2 cup of water into pan and cover with lid to
steam the dumplings.
4) Allow the water to steam out and evaporate for 4 to 5 minutes.
5) Take out of pan and serve with vinegar.
Makes about 30 dumplings.
