Maureen's Kitchen Quiche

SMITHTOWN, N.Y. Maureen Dernbach started her Smithtown restaurant in 1985. Eleven years ago she moved it across the street and tripled its size, but it's still hard to find a free seat.

They only serve breakfast and lunch, though quiche is a dish that falls somewhere in between. The recipe is featured below.

Ingredients:

6 inch pie crust (or puff pastry in a pie tin)
3 eggs
½ cup heavy cream
2 tsp pepper
2 tsp garlic powder
1 oz cream cheese
2 oz blanched broccoli (about 2 stalks cut up)
2 oz double cut bacon (about 2 strips, already cooked)
2 oz shredded swiss cheese

Directions:

Preheat oven to 325
In medium size bowl, use hand blended to beat eggs
Slowly pour in heavy cream, continue to beat
Add pepper and garlic powder, beat a little more

Fill pie crust with broccoli, bacon and pieces of cream cheese
Pour egg mixture on top
Sprinkle with swiss cheese

Bake for 35 minutes

Serves 1

You can double the ingredients and use a 9-inch pie crust
