Super Bowl snacks on a budget

We're only a day away from one of the most anticipated games of the year, Super Bowl 43. To help you make some goodies for the football fans in your life, we were joined by Eric Hara, the Executive Chef of Fishtail by David Burke. He showed us some treats that would cost you $10 or less to create. Kobe Corn Dogs
Total Cost: $10

Tempura Popcorn Shrimp w/ chili dipping sauce
Total Cost: $8

Angry Mussels
Total Cost: $9

Lobster Roll Sliders
Total Cost: $11

Kobe Corn Dogs
serves 2

6 mini Kobe hot dogs
6 skewers

Corn Batter
2 C corn meal
3 C buttermilk
1 C all-purpose flour
1 t baking powder
4 t salt
8 t sugar
2 eggs
pepper to taste

Mustard-Ahi Amirillo
2 T Ahi Amirillo
2 T dijon mustard
1 C mayo

Place a skewer through the end of each hot dog. Dip in corn batter so that the hot dog is well covered. Fry in 350 degree oil until golden brown.

Serve with mustard-ahi amirillo dipping sauce on side.

Lobster Roll Sliders with Mini Brioche Buns
yields two servings (six mini sliders)

For the lobster filling, mix together in a bowl:
1 lb lobster meat, chopped
½ C mayo
1 t lemon zest
1 T Old Bay seasoning
3 T chopped onion
3 T chopped celery
Mix together in a bowl:
2 T melted butter
½ t garlic, chopped
1 t salt

Cut six mini brioche rolls in half. Brush with garlic butter and toast until golden. Fill with lobster mixture and serve.

Angry Mussels for 2

1 lb PEI Mussels, cleaned

Angry Spice:
½ C chili powder
½ C cayenne pepper
½ C paprika
2 T salt
1 T pepper

Preheat oven to 400º
Toss ¼ c Angry Spice, mussels and 1 T olive oil. Place in oven until mussels have opened.

Angry Sauce:
¼ C picked basil leaves
1 t lemon zest
1 t chili flake
1 t chopped shallot
½ t garlic
¼ c butter
2 T olive oil

Heat olive oil in medium saucepan. Add basil and cook until crisp. Add remaining ingredients and salt and pepper to taste.
Serve with the mussels.

Popcorn Shrimp for 2

1 lb baby shrimp

For the tempura batter mix together:
2 C flour
1 egg
1 bottle Peligrino sparkling water

Heat Toss shrimp in tempura batter and fry at 350º until golden brown. Add salt and pepper to taste.

Sweet Chili Dipping Sauce
Mix together:
1 C Thai sweet chili sauce
2 t lime juice
2 t cilantro
Serve with shrimp.
