Exhibiting the same commitment he displays on the field, Washington is also a dedicated participant in the Jets' community outreach programs. Big Lou Chef - After years of testing recipes on his friends and family, the larger-than-life, primarily self-taught Executive Pit Master "Big Lou" Elrose now proudly presides over the pit of Wildwood Barbeque. The latest addition to B.R. Guest's New York properties, Wildwood Barbeque serves up multi-regional American barbecue in a rustic urban setting.
A former motorcycle cop for the New York City Highway Patrol, the six-foot-four Big Lou was the father of a young family with mouths to feed when his need for quick and satisfying meals motivated the novice chef to teach himself the essentials of cooking. After retiring from the force, Big Lou began parlaying his personal passion for barbecue into a career, gaining expertise through participation in the national competitive circuit alongside pit master pal, Robert Richter and his Big Island Bar-B-Que team. Having established himself as barbecue expert on the national competition scene, the Queens native opened Big Lou's Breakfast & BBQ, a lunch wagon in Ozone Park, before becoming deputy pit master at critically acclaimed Hill Country in New York City.
To prepare for his multi-regional menu --which is centered on his proprietary recipes and signature rubs-- the experimental genius went on a pilgrimage to the best barbecue joints in the country, stockpiling a combination of pit styles from Raleigh to St. Louis. Becoming well-known for American-infused concepts such North Carolina pulled pork, Memphis baby back ribs, Kansas City pork ribs and the like, all slow-smoked at low temperatures, cuts are served with a range of secret sauces such as his Chipotle-Raspberry, cooked up by Big Lou himself without typical flavor shortcuts like Tabasco or liquid smoke.
Bringing the art of barbecue to the table, Big Lou works with the Wildwood Barbeque team to impart the multi-regional barbecue customs with a twist, setting the New York City barbecue scene on fire.
