Rabo Encendido
(Cuban Style Spicy Oxtails)
1 cup all purpose flour
1/3 Spanish paprika
5 pounds oxtails (disjointed)
4 tablespoons of vegetable oil
1 large Spanish onion diced
2 large carrots diced
1 red bell pepper diced
1 green bell pepper diced
4 cups of red wine
6 oz tomato paste
10 oz canned whole tomatoes
16 oz beef stock
3 chipotle peppers in adobo
3 bay leaves
Salt and fresh pepper to taste
1. Mix the flour and paprika and coat the oxtails.
2. In a skillet heat the oil. Sear the oxtails on all sides and remove from pan. Add 1/2 the red wine to deglaze the pan. In a separate skillet add the other 1/2 of the oil and cook the vegetables until they caramelize. Add tomato paste and let it cook until very dark. Deglaze with remaining wine.
3. Add oxtails to the vegetables along with beef stock. Add the tomatoes chipotle and bay leaves. Let simmer in the oven for about 3 hours. Until meat easily falls off the bone.
