A taste of India at Dhaba

MANHATTAN The owner of Dhaba owns 8 other restaurants in New York and Connecticut.

He thinks this one may be his most authentic.

Dhaba is located at 108 Lexington Avenue in Manhattan.

SHRIMP KADAI

(SERVES TWO)

INGREDIENTS

10 oz shrimp
2 tbsp oil
2 medium onions chopped
2 medium tomatoes chopped
½ bell pepper cut cube style (red)
½ bell pepper cut cube style (green)
½ red onions cut cube style
1 tsp minced garlic
½ inch ginger cut julienne style
1 tsp lime juice
2 tbsp chopped coriander (cilantro)

FRESH ROASTED SPICES

2 tsp ground coriander
1 tsp ground cumin
1 tsp ground red chili powder
½ tsp turmeric
1 tsp dry fenugreek leaves

FOR TEMPERING

2 Bay leaves
2 pieces of dry red chilies
Black cardamom pod

1. Heat the oil in a wok. Add dry red chilies, bay leaves, black cardamom, garlic, onions and tomatoes. Fry for two minutes.

2. Now add all the roasted spices and stir for 2 minutes. Add water as needed for a thick sauce.

3. Add shrimp, red onions and red and green bell peppers. Cook for 2 minutes.

4. Add fresh coriander, ginger and squeeze 1 tsp lime juice.
