Fish with Peruvian Corn Salsa

LONG ISLAND The restaurant is called Painters, but it's really an art gallery and a restaurant rolled into one.

Larry Wolhandler and Steve Laird wanted to create a community for artists and people who like art, so they opened Painters in Brookhaven Hamlet 10 years ago.

The walls are covered with art. The other place you'll want to focus your attention is on the food. A menu that ranges from nachos, to the more gourmet like the halibut with corn salsa...

Chef Luis pan sears the halibut and finishes it off in the oven. Meanwhile he mixes a salsa made of tomato, avocado, cilantro, lime and jalapenos and Peruvian corn with oversize kernels.

A little olive oil and it's served on top of the fish which is served with a crab cake and asparagus.

Ingredients:

  • salt
  • pepper
  • olive oil
  • Pervuian corn 1/2 cup of kernels (oversize corn found at most Spanish stores, corn should be quickly steamed before used in salsa )
  • 1/2 avocado
  • 6 grape tomatoes
  • 2 tsp cilantro (chopped)
  • 1/2 jalapeno pepper (diced)
  • juice of half a lime
  • filet of white fish, cod, haddock, halibut

    Recipe:

    Preheat oven to 350.
    Salt and pepper the fish.
    Lightly saute in olive oil over medium heat, one minute per side
    Finish off in oven for 5 minutes

    While that's cooking, toss corn, avocado, tomatoes, peppers, lemon and drizzle of olive oil in bowl. Serve the salsa on top of the fish.
