A taste of the Mediterranean on Long Island

BRANZINO ALLA Sardinia:

  • 1/2 Branzino (Mediterranean striped bass - one filet)
  • 1 tbsp Spanish onion (finely chopped)
  • 25 golden raisins
  • 25 pine nuts
  • 4 cherry tomatoes (each split into 4 pieces)
  • 5 tsp parsley
  • 1 artichoke (cut into 4 pieces, or 4 baby artichokes)
  • 1 cup of Vernaccia white wine
  • 2 tbsp of extra virgin olive oil
  • Salt and pepper to taste
  • 1 cup stock (fish or vegetable)

    Take the Branzino filet and put 3 slits in the back. Then lightly coat it in flour. Place the frying pan on the stove and add the olive oil. Once it is very hot place the Branzino into the pan belly down, until it is brown then flip it over and add the Vernaccia. Let cook another minute before adding all the other ingredients. All that to cook for 10 minutes over medium heat. Sauce will reduce a bit, can add more wine or stock if necessary.

    Serve with favorite vegetables.
