Salads and soul food

A salad bar that offers salads yes, but also, fried chicken, collard greens, stews, mashed potatoes and everything soul food.

Below is one of their select recipes.

Baked Beef Short Ribs

Ingredients:

  • 40 lbs beef short ribs
  • 1 tbsp black pepper
  • 3 tbsp sugar
  • 5 sprigs rosemary
  • 5 sprigs thyme
  • 2 onions
  • 1head garlic
  • 8bay leaves
  • 2 tbsp fresh ginger
  • 2 kiwi
  • 16 oz oyster sauce
  • 16 oz sesame oil
  • 16 oz soy sauce

    Direction:

    Blend together ginger, garlic, onion, thyme, rosemary, bay leaves and kiwi.

    Transfer mixture to bowl and add sugar, soy sauce, sesame oil, oyster sauce and black pepper. Mix well.

  • Add to short ribs, cover container well and marinate in refrigerate overnight.

    Preheat oven at 350 degrees. Remove marinated ribs for refrigerate for 10 minutes and transfer to cooking bowl.

    Cook for two hours. Remove from oven and drain excess liquid.

    Put back into over for 10 minutes. Turn off oven after 10 minutes, allow to rest for at least 10 minutes.

    Serve and enjoy.
