Bajan Merry Mango Wings

We're going to a place where the menu is all about wings, but you won't find spicy buffalo wings or basic bbq wings. "I love wings. I've always loved wings," Colette Cyrus Burnett said.

Burnett is so crazy about chicken wings that she and her husband Edwin James opened Super Wings last year. However, this is not your typical wings place.

"We have Trini Tamarind, Chili Cilantro. We bring something different to the people," sghe said

The difference: sauces inspired by the Caribbean where Colette and Edwin are from. The Bajan Merry Mango calls on lots of jalapenos, scotch bonnet peppers, chili flakes and garlic. Then fresh mango with the skin is pureed.

Cooked down, once the wings are fried, they are tossed with the mango sauce. It is sweet and fiery at the same time. There are more than a dozen flavors.

Super Wings Bajan Merry Mango Wings


  • 1 ripe medium mango (keep skin on)
  • 1/4 tsp salt
  • 1/4 scotch bonnet pepper, seeded or 1 tsp red pepper flakes
  • 6 leaves cilantro
  • 1 small onion
  • 6 cloves garlic
  • 1 cup sugar
  • 1/2 jalepeno pepper
  • 1/4 lemon juice
  • 2 cups water

    Puree first nine ingredients coarsely then add water and bring to a simmer for ten minutes. Sauté already fried wings (6-12) in the sauce. Serve.
