Pork Chops at Segovia

MOONACHIE, New Jersey

Segovia in Moonachie has been opened even longer for over 30 years.

They serve up food from Spain like Paella, Chicken Segoviana, and Pork Chops Segovia.

Pork Chops Segovia
Ingredients:

  • ½ Green, Red, and Yellow Pepper sliced into strips
  • 2 Hot Cherry Peppers sliced
  • 4 oz. Corn Oil
  • 1 Potato cut into wedges
  • 2 Cloves Garlic sliced
  • 3 Pork Chops
  • 1 Tbls. Butter
  • 3 oz. Dry Sack Sherry
  • Salt and Black Pepper

    Preparation:
  • Pre-heat oven to 450 degrees
  • Partially sauté peppers and set aside
  • Roast potato wedges and set aside
  • In a sauté pan heat oil
  • Add pork chops and garlic
  • Sauté both sides until golden brown
  • Discard oil
  • Add butter and dry sherry
  • Salt and pepper to taste
  • Incorporate peppers and potatoes and put in pre-heated oven for 8-10 minutes
  • Remove plate and serve
