Recipe: Chicken Murphy
Ingredients:
8oz boneless breast of chicken (cut into small pieces or slices)
½ cup flour
½ cup mushrooms (white mushrooms are fine, sliced and cleaned)
½ cup chicken stock
½ cup white wine
3 TBS butter
½ cup hot cherry peppers
½ cup red vinegar peppers
Salt, pepper and oregano for seasoning
¼ cup oil
Directions:
1.Dredge chicken in flour
2. Heat oil over medium heat, add chicken
3. Lightly brown chicken
4. Add mushrooms, cook for several minutes before adding peppers
5. Add wine and stock, reduce, sprinkle in salt, pepper and oregano
Serve with homemade potato chips. Serves 2
