On the menu today are such items as mama's meatballs, chicken and black bean enchiladas and a chocolate brownie cupcake.
All the meals are based on his "Now Eat This" book, low fat and under 350 calories, including the mama's meatballs.
"These are based on my mom's recipe but about 700 calories less still good though," he said. "Most people think healthy food "yuck" I know I can make healthy food delicious."
And now he's hoping to prove that to kids.
The truck travels around town Monday thru Thursday.
Every Friday is 'Free lunch Friday's' where 100 percent of the proceeds from this truck goes to a school in our area.
"The foods that we love are not the foods that are good for us," adds Rocco.
Each Friday Chef Rocco visits a different school demonstrating healthy cooking recipes.
At North Bergen High School in New Jersey the students were making chocolate brownie cupcakes with cocoa, black beans and agave nectar and chicken noodle soup with Japanese yam noodles, boneless skinless chicken, vegetables and herbs.
Then they each get to eat the free lunch they learned how to make.
"What I'm hoping is to engage kids and their sense of curiosity to really captivate them," adds Rocco.
