FLUSHING (WABC) -- In Flushing, Queens, you'll find just about every kind of Asian cuisine, but we found a restaurant that serves up five!

That's an undertaking that Crazy Crab's owner felt compelled to do, because there's so much she loves about other cuisines.

They serve Thai, Malay, Vietnamese, plus food from the Yunnan Province in China and from Burma.

One of the dishes you'll find is called wan do fen. It's a Burmese dish that's unlike any other tofu.

Crazy Crab is located at 40-42 College Point Blvd. in Flushing.

Recipe

Crazy Crab's Yellow Split Pea Tofu

Burmese name: Wan Do Fen

Ingredients:

For the custard:

(1) 1 lb. Yellow split peas

(2) Curry powder

(3) Salt

For the sauce:

(1) Fried shallots & garlic

(2) Sesame seed & crushed peanuts

(3) Soy sauce ( sweet )

(4) lemon & sugar

(5) parsley & coriander

(6) Hot pepper (optional; but why not =P )

Recipe:

(1) Soak one pound of Yellow Split Peas in cool water over night.

(2) On the next day, place in blender and then sift through strainer.

(3) Bring 1 gallon of water to boil.

(4) Slowly pour in strained starch into boiling water and stir in the same direction until mash.

(5) Put in 1 spoon of salt & 1/2 spoon of curry powder.

STOP HERE and serve for the first (1) way to eat

(6) Place mash into a baking tray and let cool outside for 1 hour.

(7) After 1 hour, the custard is ready to eat.

FRY to serve for second (2) way to eat

(1) Yellow split pea mash Tofu (Mash Wan Do Fen)

(2) Fried yellow Tofu(Fried Wan Do Fen)

(3) As custard (Wan Do Fen)

(4) As Yellow Tofu Salad (Wan Do Fen Salad)
