RED BANK, New Jersey (WABC) -- It looks like the kind of place you'd stumble on in Maine, but the Boondocks Fishery is in Red Bank, New Jersey on the Navesink River.

Kelly Ryan opens Boondocks on May 15 and closes it on September 15. And in that time they serve up a lot of lobster, lobster rolls, fish sandwiches, shrimp tacos and spicy gumbo-- made fresh everyday.

Boondocks Fishery was damaged in Superstorm Sandy, and local residents in the community helped rebuild.

Boondock's Fishery & Grille

Ingredients:

  • cup oil
  • 2 c. carrots, chopped
  • 2 c. onion, chopped
  • 1 c. green bell pepper, chopped
  • 1 c. celery, diced
  • 2 large garlic cloves, minced
  • 6 c. clam juice
  • 1 tsp. dried thyme
  • 1/3 c. dried parsley
  • tsp. cayenne pepper
  • 2 tsp. Cajun seasoning
  • 2 tsp. Worcestershire sauce
  • 2 c. fresh diced tomatoes
  • 4 c. diced chorizo (Mexican sausage)
  • 2 c. baby clams with juice
  • lb. grouper - cubed
  • 1 lb. fresh peeled shrimp
  • 3 c. bay scallops (cubed)
  • Directions

    In a large pot, combine oil and diced chorizo. Saute for one minute and then add onions, peppers, celery, carrots and garlic. Saute for 2 to 3 minutes, stirring constantly. Slowly add clam broth, thyme, parsley, cayenne pepper, Cajun seasoning and Worcestershire sauce. Bring to a boil and add tomatoes. Cover pot and simmer for 60 to 90 minutes, stirring occasionally. Add clams, shrimp and scallops and grouper. Simmer for an additional 15 minutes. Serve over hot rice with corn chips.
