Neighborhood Eats: Salmon burgers at 'Vital' in Montclair

MONTCLAIR, New Jersey (WABC) -- This week's Neighborhood Eats takes you out for some Jamaican food.

We visited "Vital" in New Jersey where there's an emphasis on vegan and vegetarian.

It's located at 387 Bloomfield Avenue in Montclair.

There's an island feel and taste at "Vital". Kwame, Nataki and Kanika Wilson are siblings whose parents are Jamaican. Kwame is the chef and was formally trained and is in touch with his Jamaican roots.

So, much of the menu is vegan or vegetarian and you'll find items like jerk portabellas and a jerk chicken wrap.

But the most popular item is the salmon burger.

Cilantro and cumin flavor the salmon which gets a quick sear before it's finished in the oven.

Mango salsa and okra battered in plantain flour is the side dish. There's ackee and salt fish, vegan mac and cheese, along with smoothies and fresh juices.

Recipe for "Vital" Salmon Burger

(Yields 2)

Ingredients:

12oz ground salmon

1 tbs of small dices red onions

1 tsp of choped cilantro

1 tsp of ground cumin

1 tsp of salt or salt to taste

Directions:

Preheat oven to 400 degrees.

Combine all ingredients in a bowl, mix well by hand.

Form to 6oz burgers.

Heat oil in pan and sear burgers, and then finish cooking in oven for 6 minutes.
