Rice Balls at Nuovo Cucina Napoletana

NUTLEY, New Jersey (WABC) -- This week's Neighborhood Eats heads to Nuovo Cucina Napoletana in New Jersey.

It's located at 633 Franklin Avenue in Nutley.

Nuovo Rice Balls Recipe

Ingredients

2 cups uncooked Arborio rice

1/2 cup grated Parmesan (set aside 3 tsps for garnish)

1/4 cup salted butter

1/2 cup white wine

1/2 cup chicken stock

1/2 cup peas

1 medium onion, chopped

bunch parsley chopped

1/4 teaspoon pepper

1/1/2 cups of seasoned bread crumbs

And 1/3 pound of beef short rib (already braised and shredded-you can use your favorite recipe to braise)

1 cup Oil (canola or vegetable) for frying

cup oil (olive oil) for the rice to saute

For batter/breadcrumbs:

1 cup of flour, seasoned with salt and pepper

2 eggs, whisked

1 cup breadcrumbs

(keep each in separate bowl).

Directions

Heat cup oil in large saute pan

Add the rice and toast over medium heat for two minutes

Add onion and continue stirring

Add butter

Add peas and stock continue stirring

Add wine and stir

As liquids reduce add the short ribs and parsley continue to stir.

Season with salt and pepper (reserve 3 spoons of the short rib for later)

The rice will take about 25-30 minutes to cook

Add the cheese right at the end and stir

Rice should remain firm, but not hard.

Spread the rice out of a sheet pan and cool

Once cooled, scoop out a small handful and roll into a ball, insert a piece of short rib and continue to roll ball. Dip and roll in flour. Then egg, then breadcrumbs.

Fry balls in 1 cup of vegetable or canola oil over medium high heat and drain on paper towel. Top with Parmesan.
