We hosted Nina Edler from Every Day with Rachael Ray magazine on Saturday. She demonstrated some July 4th party recipes. Nina showed us how to make Mexican Fruit Salad, Beer Can Chicken, and The Big Chipper S'more
Recipes:
MEXICAN FRUIT SALAD:
1 cup cubed mango
1 cup cubed English cucumber
1 cup cubed papaya
1 cup cubed watermelon
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
4 teaspoons sugar
3/4 teaspoon ancho chile powder
Directions
In large bowl, combine first 5 ingredients. In small bowl, whisk remaining ingredients with 1/2 tsp. salt; pour over fruit and gently toss. Chill 30 minutes.
BIG CHIPPER S'MORE
potato chips (go for large, flat, sturdy chips)
dark chocolate squares
marshmallows
Directions
Top a potato chip with a square of dark chocolate. Set it near the fire so the chocolate can soften while you roast a marshmallow. Top with the roasted marshmallow, then another chip.
