Eyewitness News headed to Brooklyn to check out Turbo Pizza for Neighborhood Eats.
Turbo Pizza is a familiar dive bar that serves Detroit-style pizza, wings and salads to the Bushwick neighborhood.
Max Nelson, owner of Turbo Pizza: I had the sort of idea for this place and I wanted to work with one of my closest friends and my brother. And I was like, we don't have to try to sell pizza in Bushwick. It's one of my favorite styles of pizza and I kind of wanted to just be at a bar that is like with all my friends every day.
Jordan Dubey, owner and bar manager of Turbo Pizza: My first job in the industry was in a pizza place and it comes full circle. And I've been in this industry for like 20 years and this seemed like a really good opportunity. So, I jumped at it as soon as we had the idea.
Spencer Nelson, owner of Turbo Pizza: We think it's a good division of labor, so, like, we can all rely on each other. Yeah, we never like to stress out. Someone needs to, like, go take care of something, one of us will step in and it works out well.
John True, chef of Turbo Pizza: So, our dough is pretty traditional too, in Detroit it's very high hydration. It's about 80% hydration right now. It's similar to a focus of bread or even, I would say Sicilian dough for like New York. So, it's really essentially this pan right here, the loaded pan that makes it Detroit's because this is what's going to give you those nice crispy cheese edges. We have our own cheese blend, where we're using a couple different cheeses to get that same free go and that nice crispy crust around that.
True thinks that pizza should be fun. He also explains that customers can get quality ingredients plus the comfort of showing up in flip flops, shorts and a t-shirt. He says he takes the simple things in the ingredients, including different cheeses and meats, and just adds 'a little something' to it.
Spencer Nelson: There's nothing better than throwing a slice of pizza and a beer in front of someone and seeing the smile.
Dubey: This is kind of like what people call a third room in New York City where you live in an apartment and you'd want to get out of there. You need a third place to be. We try to make it cozy and comfortable, where you kind of walk in and feel like it's part of your living room or like your friends growing up like that, a dad's basement or something like that.
Max Nelson: You're going to meet some of your best friends if you hang out here long enough and you can have some of the best pizza in the world, you can have some good drinks, too.
