NEW YORK (WABC) -- Chicken is the foundation for Field Failing's restaurant. Field wasn't always in the food world - he was at one time a competitive bike racer, but to support the sport, "Fields Good Chicken" was born from his love of cooking and racing.

"The idea for chicken came about because of the bike racing, and wanting to cook healthy meals for myself," says Field.

His roast chickens first get a rub of salt, paprika, garlic powder and onion powder. Meanwhile, onions, garlic and olive oil are blended together along with sage, rosemary, thyme and pepper. The rub is then massaged on to the chicken, and it marinades overnight before it goes into the oven.

The chicken is served whole or half, but also in salads, in sandwiches and in bowls piled with your favorite toppings. It is fast and healthy for a New York kind of crowd - especially near Wall Street.

For a guy who used to race bikes, chickens are a whole new challenge.

Recipe

Whole Roasted Chicken from Fields Good Chicken

1 Three-pound whole chicken

1 cup Herb Marinade (recipe below)

5.5 tbsp Spice Rub (recipe below)

1. Add spice rub to chicken and make sure skin is evenly coated

2. Add herb marinade inside and outside the chicken

3. Allow to marinate overnight, or at least for 4 hours

4. Preheat oven to 425 degrees

5. Remove chicken from marinade and discard excess marinade

6. Tuck wings behind bird and put on a roasting rack

7. Tie legs together with butchers twine

7. Roast until done (about an hour or until the breast reaches 165 F on a thermometer)

8. Let rest on a cutting board for 10 minutes

Herb Marinade:

3 tbsp Fresh Rosemary

1 tbsp Fresh Thyme

2 tbsp Fresh Sage

4 cloves Garlic

1/2 of a Yellow Onion

1 tbsp Black Pepper

1 cup Olive Oil

1. Combine olive oil, onion, and garlic in a food processor.

2. Blend into a smooth paste

3. Add herbs and pepper

4. Blend until herbs are chopped and combined

Spice Rub:

1.5 tbsp Kosher Salt

2 tbsp Paprika

1 tbsp Garlic Powder

1 tbsp Onion Powder

1. Mix spices in a bowl until well combined

2. If you are bringing the chicken first (recommended) omit the salt from the spice rub
