Almond crusted flounder from Buoy One

RIVERHEAD The restaurant doubles as a fish market.

It's called "Buoy One" and is at 1175 West Main Street in Riverhead.

Almond crusted flounder

Ingredients

Breading
**********

1 cup flour
1 egg
3 tbsp water
1 cup panko crumbs
1/2 cup finely chopped almonds

Sauce
********

1 1/2 ounce white wine
Juice of 1/2 fresh lemon
1 tbsp butter
2 sprigs chopped fresh parsley
6-8 ounces fresh flounder filet
1 once corn oil for sauteing

Preparation

Whisk egg & water ~ set aside
Combine panko crumbs & almonds ~ set aside
Juice lemon ~ set aside

Dredge flounder filet in flour , coating both sides
Dip into the egg wash
Finish the standard breading by dredging the flounder filet into the panko/almond mix. Again, coat both sides
Set aside

Heat a saute pan on medium to medium high heat
Add the corn oil
Add the breaded flounder filet and cook on both sided until golden brown.
Remove from pan and set aside

De glaze pan with white wine.
Slightly reduce the wine
Add the freshly squeezed lemon juice
Finish with butter and parsley.
Pour sauce over the flounder filet.

What makes Buoy One's flounder dish awesome. Absolutely the freshest fish and freshly squeezed lemon juice. Skip the bottled lemon juice!
