Sweetie Pie's Lemon Victorian Cakes

  • 1 Stick Butter, room temp
  • 4 egg whites
  • 250 mL whole milk
  • 1 ¾ Cup and 1Tb granulated sugar
  • 2 1/8 Cup Cake flour, sifted
  • 2 tsp lemon extract
  • 1 Tb baking powder
  • 1/8 tsp salt
  • *Yields 6 small 2 tiered cakes*

    1. Sift drying together, set aside

    2. Cream butter and sugar together 5 minutes or until light, white, and fluffy

    3. Incorporate egg whites slowly to butter mixture

    4. Alternately in thirds, slowly add the sifted dry ingredients and milk to batter, finishing w/ the milk

    5. Pour into previously buttered and floured caked pans

    6. Bake 15-20 mins in a 350° oven or until golden brown. Flip into cooling rack immediately.

    Ultra Light Lemon Frosting

  • Yellow gel food coloring
  • ½ quart heavy cream
  • 1 cup crème fraiche
  • 2tsp lemon extract
  • 3 tb granulated sugar
  • ½ cup confectioner sugar (or, to taste) SIFTED
  • 1. Whip cream with granulated to stiff peaks

    2. Add confectioner sugar to taste

    3. Fold in remaining ingredients
