Leek Pasta at La Riviera Trattoria

Franco Carlino opened La Riviera Trattoria 31 years ago in Clifton and his customers say it's so consistent.

Franco is from Calabria, but his menu covers much of Italy. There's seafood, sausage and chicken dishes, and plenty of pasta.

Leek Pasta


1 medium size stalk of leek
3 oz. extra virgin olive oil
1 clove of garlic (minced)
1 pinch of white pepper
5oz. coin-like pasta
2 TBS. parmigiano cheese
1 TBS butter
3oz. vegetable broth


1. Prepare the stalks by rinsing and cutting them julienne style

2. Coat the saucepan with extra virgin olive oil and crushed garlic clove ( which will be removed at the end), add the leeks, white pepper, and sauté until golden brown

3. Add broth to soften the leek and cook slowly for 6 minutes

4. Toss the cooked pasta in the leek sauce, add butter and cheese

5. Garnish with basil and a sprinkle of shavings of parmigiano cheese on top
