Leek Pasta
Ingredients:
1 medium size stalk of leek
3 oz. extra virgin olive oil
1 clove of garlic (minced)
1 pinch of white pepper
5oz. coin-like pasta
2 TBS. parmigiano cheese
1 TBS butter
3oz. vegetable broth
Preparation:
1. Prepare the stalks by rinsing and cutting them julienne style
2. Coat the saucepan with extra virgin olive oil and crushed garlic clove ( which will be removed at the end), add the leeks, white pepper, and sauté until golden brown
3. Add broth to soften the leek and cook slowly for 6 minutes
4. Toss the cooked pasta in the leek sauce, add butter and cheese
5. Garnish with basil and a sprinkle of shavings of parmigiano cheese on top
