Neighborhood Eats: Shark and Bake

Trini-Gul is a family-run business in Brooklyn where her sister does the cooking.

The food from Trinidad is totally eclectic with influences from India, Africa, China and even Lebanon. Trini-Gul is located on a busy stretch of Bed-Sty, a world away from the islands, but with plenty who crave the taste of meals like the bake and shark.

The recipe for Shark and Bake is below.

For Shark:

1 lb shark, can use sand shark or similar fish, cut up into smaller 2 inch pieces
3 tbsp green seasoning*
1 tsp paprika
1 tsp pepper
1 tsp salt
1 tsp all purpose seasoning
2 tsp crushed garlic
2 tsp soy sauce
2 tsp worcestershire

1/4 cup flour ( to flour shark )
1/4 cup breadcrumbs
oil for frying

Directions:

  • Take first 9 ingredients, including the shark and combine in large bowl.
  • Let marinade for 30 minutes.
  • Then dust pieces of marinated fish in mixture of flour and bread crumbs.
  • In deep fryer or in 3 inches of oil, fry the fish til golden brown,
  • Remove from oil and drain.

    * Green seasoning, or tamarind sauce (can be purchased at west indian markets) or you can make green seasoning with juice of 3 limes, 2 cloves crushed garlic, 1/3 cup ketchup, 4 leaves chandon beni. boil ingredients and reduce.

    For Bake:

    2 cups flour ( all purpose)
    3/4 tsp salt
    1 tsp baking powder
    1 tsp yeast
    1/2 tbsp sugar
    3/4 cup water
    oil for frying

    Directions:

  • Combine first 6 ingredients, into nice ball, let sit for 30 minutes.
  • Divide this large ball into smaller balls about three inches in size.
  • Flatten those smaller balls out to be about 1/8 to 1/4 inch thick.
  • Place in deep fryer or several inches of hot oil.
  • They'll puff up and float to the top. let cook until golden brown.
  • Remove from oil and drain.

    Slice open your bake and fill with several pieces of fish and your favorite condiments, such as cucumbers and hot sauce.
