Kisco Kosher Non-Dairy Noodle Pudding

Noodle pudding is sweet like rice pudding. It's also quite dense and it's baked. You can enjoy it hot or cold and there are both dairy and non-dairy versions.

We're making the non-dairy version, tonight, at Kisco Kosher Deli. It's is located at 230 east Post Road in White Plains.

For 25 of his 40 years in the restaurant business Zeev Bain had a deli in Mount Kisco.

But two and half years ago he moved to the deli White Plains but kept part of the name, calling it Kisco Kosher.

It is right along the commercial area of East Post Road and his customers have followed him.

There are tongue, pastrami, corned beef, fresh roasted turkey, stuffed cabbage, knishes and kugel, which is noodle pudding.

To make it, first boil your egg noodles. The cooked noodles will get mixed in with two eggs, sugar, melted margarine and thickened with a little flour.

Once that's mixed together add some fruit cocktail and pour that into a greased baking tin, top off with some more fruit and bake for about an hour.

The end result is sweet, dense and dairy-free which is why Zeev can serve it at his kosher deli. A taste tradition partnered with convenience.

The complete noodle pudding recipe:

Kisco Kosher Non-Dairy Noodle Pudding

8 oz.wide egg noodles
2 eggs
1/2 cup sugar
1 tsp. cinnamon
1 tsp vanilla
1 cup canned fruit pieces, well drained
1/2 cup margarine
2 TBS FLOUR
Sliced Pineapple
5 Marashino cherries
1 greased (with margarine) tin or casserole dish

PREPARATION:
(preheat oven to 350 degrees)
1. Boil noodles according to the directions on the package.
2. Drain and rinse with cold water.
3. In medium sauce pan melt margarine and add flour. Wisk well.
3. In large bowl, beat two eggs. Add sugar, vanilla, melted margarine and flour combination. mix.
4. Add noodles to bowl and cinnamon. Mix.
5. Add 1/2 of fruit cocktail. Mix.
6. Pour into tin and then top with remaining fruit cocktail.
7. Decorate top with one pineapple slice and cherries.
8. Bake in over for appx. 1 hour, uncovered.

Noodle pudding can be served hot or cold.
