Cider Vinegar 1/4 cup
Salt 2 tsp

Marifax or Cranberry Bean 1 lb.
Smocked Ham Hock, neck, leg 1/2 a hock, split (what ever you can find)

To Start:

Grapeseed or Vegetable Oil 2 tsp
Bacon, large dice 1/2 lb.
Garlic, chopped 3 cloves
Onion, chopped 2 onions
pinch of salt

Seasoning Mix

Ketchup 1 1/4 cup
Mustard 1/2 cup
Molasses 2 oz.
Brown Sugar 1/2 cup
Cider Vinegar 1/4 cup
Salt 2 tsp

Soak beans with water and hock for at least 8 hours.

Cook bacon in grape seed oil, then add garlic and onion and cook slowly. Add seasoning base and mix through. Drain beans and add to pan. Add water to cover by 2 inches, then add smoked pork. Bring to a simmer and bake in oven for 8-12 hours until cooked through. Alternately, pre cook the beans and add to the seasoning mix to reduce cooking time in oven. (if beans are pre cooked, bake in oven for 1 hour)
