Indian Food with a twist

/*Desi Galli*/, located in */Kipps Bay*/, offers a bit of nostalgia for folks serving up Indian street fare like you find in Mumbai, and the name, Desi Galli loosely translates to Indian Lane.

It's fitting, since the restaurant is so narrow. Some folks stay, but most take their food to go.

Vada Pav
Makes 8 servings
Vada Ingredients:

  • 1 ½ cup boiled & mashed potatoes
  • 2/3 green chilies chopped
  • 1 tsp mustard seeds
  • 1 tbsp chopped garlic
  • 8/10 curry leaves
  • ½ tsp turmeric powder
  • 1 tbsp chopped ginger
  • 1 tbsp oil
  • Salt to taste
  • 8 Pav buns
  • Chutney

    Batter Ingredients:

  • ¾ cup besam
  • ¼ tsp turmeric powder
  • Pinch of baking soda
  • Salt to taste
  • Oil for deep frying

    Vada Method:

  • Heat the oil and add mustard seeds
  • When they crackle, add curry leaves and sauté for a few seconds
  • Add chopped garlic, ginger, green chilies and sauté for a few seconds
  • Add the potatoes, turmeric powder, salt and mix well
  • Remove from the flame to cool
  • Divide into 8 equal portions, creating Vada balls

    Batter Method: • Combine all the ingredients of the batter in a bowl using approximately? cup of water • Heat oil on a medium flame for frying • Dip each portion of Vada balls into the batter, coat well and deep fry until golden (drain on paper towel) • Take one Pav bun, slice in half (not all the way) add Vada ball and chutney, and enjoy!
