POPOVER RECIPE
4 eggs
1 2/3 cups milk
2 T melted butter or oil
8 ounces flour
1/8 t salt
Additional butter, oil or Pam to spray cups
1. In a bowl, beat 4 eggs, 1 2/3 cups milk, 2 tablespoons oil or melted butter.
2. Add 8 ounces all purpose flour, 1/8 teaspoon salt to contents of bowl and beat until smooth.
Let rest at least 20 minutes while oven heats to 425 degrees.
3. Place custard cups or popover pans on a cookie sheet and preheat 5 minutes.
Brush cups lightly with melted butter, oil or spray with Pam.
Fill cups 3/4 full.
4. Bake for 20 minutes. Reduce heat to 325 degrees. Bake an additional 20 minutes. Do not open oven while cooking.
Serving option: popover eggs benedict Arnold
1 Popover split open
Top with sliced Black Forest Ham
Slide on 2 Fried Eggs sunnyside up
Top with Lemon Hollandaise
Garnish with Parsley
